Wow what a difference 50 pounds of dynamat + 2 layers of insulation make!
I understand now what it means to 'now I can hear the engine', and we're not
even done yet.

Now at the wall ceiling junction above the drivers side and passengers side there is a black
foam thing. What is it? Can it be removed? I'm avoiding that area while insulating until
I hear back from you all.

The top ones can be removed with impunity. There will be a cut-out in the headliner you will have to deal with. The lower ones are obviously removed by upfitters and replaced with usually a flat board going across. However, don't remove the lower ones until you are ready with a replacement. The cavity behind contains an airbag and the edge of the headliner would be hanging out there ready to be injured.

AFAIK, no one has been able to find out for sure why these things are there. Competitors have them, too. Some people think it's for protection in an accident, but that's pretty far-fetched especially for the upper ones.
