It would appear that the compact thumbwheel or mechanical units would work. Not sure about your description... sound like you want the fans on if below a certain temperature, but then you say if it gets too warm ???

Fans on if below a Certain temp. Fans also on if above a certain temp.
For example: fans on if below 40 degrees and dans on if above 80 degrees.

What you are looking for is a differential thermostat. When the temperature is within the specified range, the load (fan) is on, when it is outside the range the load (fan) is off. You then need to replace the load with a Normally Closed relay to control the fan. That way the actions of the thermostat will be reversed. Off when within the range, and On when outside the range.

The way it's described, it looks like the
011750-01
would work with the contacts tied together in parallel.

Set the red knob at 40 and the blue knob at 80.

I'd suggest calling the company to verify...
